There are a few characteristics you should consider when looking for a server host in Europe. First, you should think about the amount of bandwidth you'll need. Depending on what kind of server you're running, you might need more or less. Second, you'll want to think about storage space. You don't want to run out of space too quickly! Lastly, you should consider the processing power of the server.
